Overview
The Coastal Commons Resource Stewardship Program is a practical framework for increasing resource utilization, reducing waste, and creating economic, social, and environmental value throughout the food system.
Guided by the CORE methodology — Connect, Optimize, Recover, and Elevate — the program helps organizations rethink how food, materials, labor, and infrastructure move through their operations.
Rather than viewing surplus resources as waste, we view them as opportunities for innovation, efficiency, and value creation.
Use more. Waste less. Create greater impact.
Why Resource
Stewardship
Matters
Globally, nearly one-third of food produced for human consumption is lost or wasted. At the same time, producers struggle with narrow margins, communities face food insecurity, and ecosystems bear the burden of unnecessary resource extraction.
Food waste is not simply a disposal problem. It is often the result of disconnected supply chains, inefficient systems, and missed opportunities to fully utilize the resources already available.
The Coastal Commons Resource Stewardship Program addresses these challenges through system design rather than end-of-pipe solutions.
Our Approach
Connect
Build stronger relationships between producers, processors, distributors, and consumers. By shortening supply chains and improving communication, organizations can make better purchasing decisions, reduce excess inventory, and improve resource planning.
Optimize
Improve operational efficiency and resource utilization through strategic procurement, inventory management, cross-utilization of ingredients, production planning, menu engineering, and shared resource systems. The most effective waste reduction strategy is preventing waste before it occurs.
Recover
Capture value from underutilized resources through whole-animal and whole-fish utilization, secondary products, stocks and preserves, fermentation and value-added processing, food donation partnerships, and composting and nutrient recovery. Recovery transforms what was once considered waste into economic and community value.
Elevate
Generate measurable benefits for communities and ecosystems — improving profitability, strengthening producer livelihoods, reducing disposal costs, increasing food access, supporting workforce development, fostering innovation, and supporting coastal restoration and ecosystem health.
Areas of Focus
Food Waste Reduction
Reducing edible food loss through smarter procurement, inventory management, production planning, and redistribution strategies.
Circular Resource Systems
Designing systems where byproducts and surplus materials are redirected into productive uses rather than disposal streams.
Full Catch & Whole Harvest Utilization
Maximizing value from seafood, produce, and agricultural products through comprehensive utilization strategies.
Composting & Nutrient Recovery
Returning nutrients to productive use through composting, soil-building initiatives, and regenerative partnerships.
Education & Culture
Building organizational cultures that recognize resources as assets rather than waste.
Current
Applications
The Resource Stewardship Program is being developed and tested through Coastal Commons initiatives including:
- Poydras Market Café
- Esplanade Market Café
- Full Catch
- Producer Partnership Networks
- Community Food Systems Projects
These real-world applications allow us to continually refine, evaluate, and improve the program while generating measurable outcomes.
Vision
We believe waste is often a symptom of system design.
By creating stronger connections, improving efficiency, recovering value, and elevating communities, we can build food systems that are more resilient, more profitable, and more environmentally responsible.
The future of food is not simply producing more. It is learning to steward what we already have more wisely.
